Blueberry Cranberry Chicken Salad

A fresh and fulfilling healthy salad

STEP 1
4 cups cubed cooked chicken breast
3 cups DOLE Frozen Blueberries, partially thawed
2 cups dried cranberries
1 cup chopped DOLE Celery
3/4 cup diced orange or red bell pepper
1/2 cup thinly sliced green onions

Combine chicken, blueberries, cranberries, bell pepper and green onions in large bowl.

STEP 2
1 cup lemon flavored low-fat yogurt
1/4 cup mayonnaise
1/2 teaspoon salt

Whisk together yogurt, mayonnaise and salt in small bowl. Gently fold into chicken-fruit mixture; chill.

STEP 3
2 pkgs. (6 oz. each) DOLE Butter Bliss

Arrange salad blend on small plates and spoon chicken-fruit mixture over salad.

Serves 10
