Sliced Sweet Potatoes and Onions

These glazed potatoes make it a favorite accompaniment to ham and pork dishes.

1 large onion, thinly sliced into rings
2 tablespoons packed light brown sugar
Salt and pepper to taste
2 pounds sweet potatoes (yams), peeled and thinly sliced (about 6 cups)
2 tablespoons maple syrup
2 tablespoons light margarine, melted
1/2 teaspoon dried thyme

Preheat oven to 350 degrees F.

In 2-quart oblong baking dish coated with nonstick cooking spray, arrange onion slices. Sprinkle with brown sugar and salt and pepper to taste. Layer sweet potato slices over onion, overlapping slices.

In a small bowl, combine maple syrup, light margarine and thyme. Pour over sweet potato and onion slices. Cover dish with foil and bake for 1 hour or until tender.
