2 red or yellow potatoes
10 ml butter or margarine, melted 2 tsp
5 ml lemon juice 1 tsp
25 ml parmesan cheese, grated 2 tbsp
pepper to taste
Cut the potatoes in half lengthwise; brush cut surfaces with mixture of butter and lemon juice. Combine cheese and pepper; dip cut side of potato halves into mixture to generously coat. Place cut side down on well greased baking sheet. Bake in 375 F (190 C) oven 25 to 30 minutes or until potatoes are tender.
