Cranberry Ginger Salsa

1 3/4 cups cranberries
1/3 cup raisins
1/4 cup granulated sugar
1/4 cup pineapple juice
2 tablespoons chopped candied ginger
1/2 teaspoon grated orange peel
1/3 cup crushed pineapple

In a saucepan, combine cranberries, raisins, sugar, pineapple juice, ginger and orange peel. Bring to boil and simmer for about 5 minutes, or until the cranberry skins begin to pop, stirring after 3 minutes.

Add pineapple; mix well. Set aside to cool.

Makes 8 servings.
