2 large zucchini, grated
5 ml salt 1 tsp
1 large egg
125 ml feta cheese, crumbled 1/2 cup
3 green onions, sliced
1 clove garlic, minced
2 ml dried oregano, crumbled 1/2 tsp
40 ml flour 3 tbsp
30 ml pine nuts 2 tbsp
15 ml vegetable oil, for frying 1 tbsp
In a large colander; mix zucchini and salt, tossing lightly. Let stand about 1 hour to drain, tossing several times. Squeeze out moisture and pat dry with paper towels.
In a large bowl; beat egg. Add zucchini, cheese, onion, garlic, oregano, flour and pine nuts. Mix well. Divide mixture and form patties.
In a non-stick skillet; heat oil. Fry patties until golden brown, approximately 5 minutes on each side.
