White Chocolate Macadamia Cookies

125g butter or margarine
2 teaspoons vanilla essence
1 cup brown sugar, firmly packed
1 egg, lightly beaten
1-1/4 cups plain flour
1/2 self raising flour
1 cup coconut
1 cup chopped, unsalted macadamia nuts
200g white chocolate, chopped

Cream together the butter, vanilla, sugar. Beat in the egg until light and fluffy. Stir in sifted flours, coconuts, macadamias and chopped chocolate. Shape level tablespoons into balls and place about 1 inch apart onto greased biscuit trays. Bake at 190 degrees Celsius for about 12 minutes or until lightly browned. Cool on trays.
