White Beans Ragout

Ingredients for 10 servings for 100 servings
White Beans 1 kg 8 kg
Onion 0,5 kg 4 kg
Oil 0,2 kg 1,5 kg
Tomato Paste 0,15 kg 1 kg
Greens 0,05 kg 0,5 kg
Bay Leaves 1/4 gram 1 gram
Thyme 1 Spring 5 Springs
Garlic 0,05 kg 0,4 kg
Salt 0,05 kg 0,3 kg

The beans are chosen, washed repeatedly, and then let to boil with cold water in a vessel. After 1/2 hour of boiling, when the water has become yellowish, it is thrown away and replaced with fresh cold water, then let to boil again. During the boiling process, the foam is removed. After the boiling has finished, salt is added. The peeled and minced onion is browned into a hot oil vessel. After it has fried (browned) the tomato paste, the thyme, the laurel leaves and the peeled and minced garlic are added.Over these the boiled beans are added and boiled for another 30 minutes.

It is served cold, with chaffed greenery on top.
