Veal Parmesan for 100

Servings: 100 Portions (4 Pans)
Portions: 1 Steak Each
Pan Size: 18 by 26-inch Sheet Pan
Temperature: 350 degrees F. Deep Fat and 350 degrees F. Oven

100 steaks (35 lb) veal steaks, breaded, frozen
Tomato Sauce recipe, prepared
50 x 1 ounce slices (3 lb 2 ounces) Mozzarella cheese
2 cups (8 ounces) Parmesan cheese, grated or pizza blend cheese

Cook frozen steaks in deep fat until golden brown, about 5 minutes. Place fried steaks on 4 sheet pans. Prepare Tomato Sauce recipe. Slice 3 lb 2 ounces Mozzarella cheese into 1 ounce slices; cut each slice in half. Place 1/2 ounce cheese on each steak. Pour 6-1/2 cups sauce over steaks in each pan. Use 8 ounces (2 cups) grated Parmesan or pizza blend cheese; sprinkle 1/2 cup over steaks in each pan. Heat in a 350 degrees F. oven 15 minutes or until cheese is melted.

NOTE:
Other sizes and types of pans may be used.
