2 lb turnips
1 tablespoon oil
12 oz fresh or canned tomatoes
1 inch ginger, grated
1 tablespoon ground coriander
1/2 teaspoon turmeric
1/4 teaspoon cayenne
2 c water
3 tablespoon fresh coriander (cilantro)
Salt to taste
Peel turnips and cut in half lengthwise. Put cut ends on cutting board and slice lengthwise into 1/3 inch slices.
Heat oil, fry tomatoes for 2 minutes. Add the spices and fry for 1 minute. Add the turnips, water and salt. Cover and cook for 20 minutes. Stir, cook 10 minutes more, remove from heat and add the fresh coriander and serve.
