15 ml olive oil 1 tbsp
1 large onion, diced
1 red pepper, diced
1 green pepper, diced
175 ml chicken stock 3/4 cup
40 ml white vinegar 3 tbsp
15 ml dijon mustard 1 tbsp
salt & pepper
250 ml turkey breast, cooked & diced 1 cup
In a skillet; heat oil. Add onion and peppers and saute over medium heat for 5 minutes or until vegetables are tender. Place in a large bowl. Add chicken stock, vinegar, dijon mustard, salt and pepper. Add turkey and mix thoroughly. Great served on a bed of lettuce or on your favourite bread.
