Turkey and Zucchini Meatloaf

625 g ground turkey 1 1/4 lb
250 ml zucchini, coarsely grated 1 cup
175 ml onion, finely chopped 3/4 cup
125 ml dry seasoned breadcrumbs 1/2 cup
50 ml fresh parsley, chopped 1/4 cup
1 large egg
salt & pepper to taste
2 ml garlic powder 1/2 tsp
50 ml peach preserves 1/4 cup
15 ml dijon mustard 1 tbsp

Preheat oven to 350 F (180 C). Combine first 9 ingredients in large bowl and mix well. Shape mixture on rimmed baking sheet into 8 x 4 x 2 inch (20 x 10 x 5 cm) loaf.

Bake meat loaf 35 minutes. Remove from oven. Stir preserves and mustard in small bowl to blend. Spread glaze over top of meat loaf. Return to oven; bake until thermometer inserted into center registers 170 F (77 C); about 20 minutes longer.

Transfer meat loaf to platter. Cut crosswise into slices and serve.
