Tomato Mozzarella Salad

50 ml olive oil 1/4 cup
30 ml vinegar 2 tbsp
15 ml fresh parsley, chopped 1 tbsp
10 ml dijon mustard 2 tsp
5 ml sugar 1 tsp
2 cloves garlic, minced
2 ml dried basil 1/2 tsp
2 ml black pepper 1/2 tsp
1 ml salt 1/4 tsp
30 ml water 2 tbsp
3 large tomatoes
16 romaine lettuce leaves
125 ml mozzarella cheese, cubed 1/2 cup
6 green onions, sliced

VINAIGRETTE: In a jar with tight fitting lid; whisk together oil, vinegar, parsley, mustard, sugar, garlic, basil, pepper, salt and water; chill. Shake before using.

SALAD: Cut tomatoes in half; cut each half crosswise into slices. Arrange 2 lettuce leaves on 8 salad plates. Arrange tomatoes slices on lettuce; sprinkle with cheese and green onion.

At serving time, pour vinaigrette over each salad.
