8 ripe large tomatoes, sliced
2 small cucumbers, sliced into thin rounds
1 small red onion, sliced thinly
150 ml olive oil 2/3 cup
90 ml red wine vinegar 6 tbsp
50 ml parsley, chopped 1/4 cup
45 ml basil, chopped 3 tbsp
Arrange tomatoes, cucumbers and onion on large platter. Whisk oil, vinegar, parsley and basil in medium bowl to blend. Season to taste with salt and pepper. Drizzle over salad.
