15 ml olive oil 1 tbsp
1 onion, chopped
1 garlic clove, finely chopped
750 g plum tomatoes, diced 1 1/2 lb
50 ml red wine 1/4 cup
1 bay leaf
1 sprig fresh thyme
salt & pepper
30 ml fresh basil leaves 2 tbsp
parmesan cheese, grated
In large saucepan, heat oil. Add onion and saute for 4 minutes. Add garlic and saute for 1 minute longer. Add tomatoes, wine, bay leaf and thyme. Season with salt and pepper. Cover and simmer for 15 minutes. Remove bay leaf and thyme. Strain sauce. Add basil leaves. Spoon over hot pasta and sprinkle with cheese.
