Syrian Potato Salad

1 lb potatoes, boiled, peeled and cubed
4 tablespoon olive oil
1 lemon, juice of
1 onion, finely chopped
1/4 teaspoon black pepper
1 tablespoon dried mint
1 tablespoon parsley, chopped
8 black olives – rinsed and drained
2 tomatoes – sliced

Number of Servings: 4

Toss the warm potatoes with the olive oil. Add the lemon juice, chopped onion, pepper and mint. When cool garnish with the parsley, olives and tomatoes.
