Sweet Red Pickles

2 gal. large cucumbers
2 cups dehydrated lime
8-1/2 qt. water
1 small bottle red food coloring
1 tablespoon alum
1 cup white vinegar

Peel and cut cucumbers into spears. Remove seeds. Place pickles into lime water solution and let stand 24 hours. Drain and wash in cool water 2 or 3 times. Pour cold water over spears and let soak 3 or 4 hours. Drain well. Combine vinegar, red coloring and 1 tablespoon alum. Add to pickles and add enough water to cover pickles. Simmer all for 2 hours. Drain.

Syrup for Pickles:
2 cups white vinegar
10 cup sugar
2 cups water
1 package red cinnamon candy
8 sticks cinnamon

Bring all ingredients to a boil and dissolve candy. Pour over cucumber pickles and let stand overnight. Drain and heat over 3 mornings in a row. On the last day, heat pickles in liquid and seal in sterilized jars.
