2 teaspoons peanut or veggie oil
1 large clove garlic, minced
6 cups packed fresh spinach leaves (about 8 ounces)
1 teaspoon soy sauce
1 teaspoon rice vinegar
1/4 teaspoon sugar
1 teaspoon sesame seeds (toasted in skillet until brown)
Heat your wok or large heavy metal skillet over medium high heat, add oil, heat until smoking. Add garlic, cook 1 minute.
Add spinach, soy sauce, vinegar and sugar, stir fry 1-2 minutes or until spinach is wilted. Sprinkle with sesame seeds. Serve hot.
