BASE:
3 cups broccoli florets
2 TBSP vegetable oil
1 TBSP grated ginger
1 teaspoon chopped garlic
1/2 teaspoon sambal oelek or other Asian hot sauce
1 small onion, cut into wedges
4 shiitake mushrooms, stemmed and sliced
1 lb large shrimp, shelled
SAUCE:
2 TBSP soy sauce
2 TBSP oyster sauce
1/4 cup chicken stock
1/2 teaspoon sesame oil
1 noodle nest
2 TBSP finely chopped green onions
USE A WOK OR A LARGE NON-STICK SKILLET. ALWAYS STIR FRY ON HIGH HEAT AND HEAT WOK BEFORE ADDING OIL, TO PREVENT STICKING. FOR SPEEDY COOKING, CHOP AND MEASURE EVERYTHING BEFOREHAND. SAMBAL OELEK IS A HOT INDONESIAN CHILI SAUCE AVAILABLE AT ASIAN GROCERY STORES.
Bring large pot of water to a boil. Add broccoli, bring back to boil, drain and rinse with cold water until cool.
Heat oil in wok or skillet on high heat. Add ginger, garlic and sambal oelek. Stir fry for 30 seconds.
Add onions, shiitake mushrooms and broccoli and stir fry 1 minute. Add shrimp and cook until pink, about 2 to 3 minutes. Combine soy sauce, oyster sauce, stock, and sesame oil. Pour into wok and bring to boil.
Pour over noodle nest and garnish with green onions.
