Stewed Tomatoes and Cucumbers

30 ml oil 2 tbsp
4 cloves garlic, chopped
250 ml onion, chopped 1 cup
1 red pepper, seeded & chopped
4 medium cucumbers, peeled, halved & seeded, cut into large chunks
500 ml ripe tomatoes, chopped 2 cup
1 ml sugar 1/4 tsp
salt & pepper to taste
5 ml lime juice 1 tsp
50 ml green onions, chopped 1/4 cup

In a large saucepan; heat oil over medium heat. Add garlic, onion and red pepper. Saute until just tender. Add cucumber, tomatoes, sugar, salt and pepper. Stir well to combine. Simmer and cook until cucumbers are translucent. Add lime juice and green onion.
