45 to 55 lb Steamship Round Roast, whole round, beef
Approx. cooking time 6 hours.
Trim bottom of steamship to sit flat. Trim outer fat to 1/8-inch. leave a thin layer of fat, helps the meat stay moist while cooking. Season outside of roast well.
Place a meat thermometer in the thickest part of the meat. Don’t let the tip of the thermometer touch the bone.
Remove from the oven when thermometer read 130 degrees F.; set aside for at least 30 minutes. Temperature will continue to rise, reaching approximately 140 degrees F.
Cut with a carving knife. Cut parallel with the cutting board; thin slices against the grain.
