1 can black beans, rinsed & drained (14 oz / 398 ml)
375 ml corn kernels
375 ml tomato, chopped
175 ml green onion, thinly sliced
75 ml fresh cilantro, minced
125 ml oil
125 ml fresh lemon juice
10 ml salt
In a medium bowl; combine beans, corn, tomato, onion and cilantro.
In a small bowl; whisk together oil, lemon juice and salt.
Pour dressing over salad and stir gently to combine. Cover and refrigerate for one day before serving.
