1/4 cup bacon drippings or butter
1 large onion, chopped
1 (14 1/2-ounce) can ready-cut tomatoes
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 cups okra, sliced
3 cups chicken broth
1 cup uncooked rice
Melt drippings or butter in large heavy soup kettle or Dutch oven. Add onion and saute until lightly browned.
Add remaining ingredients. Heat to boiling, tightly cover and reduce heat. Simmer for 30 minutes. Serve hot.
