Smothered Bacon Mushroom Chicken

30 ml butter, melted
1 clove garlic, minced
2 chicken breasts
5 ml seasoning salt
2 thick slices bacon
125 ml mushrooms, sliced
50 ml cheddar cheese, shredded
50 ml heavy cream

In a 9 x 13 inch (23 x 33 cm) baking dish; mix melted butter and garlic.
Place chicken into pan and sprinkle with seasoning salt. Turn over and sprinkle other side.

Place bacon strips on top of chicken and then sprinkle with mushrooms.

Bake in preheated 350 F (180 C) oven for 45 minutes or until chicken is no longer pink inside. Cover with shredded cheese and bake for 5 additional minutes or until cheese is melted.

Remove chicken to serving platter. Remove juices from baking dish and pour into sauce pan. Add cream and whisk over low heat until thickened. You may have to add a bit of cornstarch to thicken. Pour sauce over chicken and serve warm.
