4 cups shredded sweet potatoes (about 2 large)
2 tablespoons butter or margarine
1/2 cup golden raisins
2 tablespoons maple syrup
Prepare sweet potatoes and set aside.
Melt butter in a large, non-stick skillet. Add sweet potatoes and saute over medium-high heat 3 minutes, stirring constantly. Add raisins and maple syrup; saute 1 to 2 minutes or until sweet potatoes are tender.
Makes 4 to 5 servings. (Recipe can be doubled.)
