Scalloped Potatoes

6 medium potatoes
45 ml margarine or butter 3 tbsp
1 small onion, finely chopped
45 ml all-purpose flour 3 tbsp
5 ml salt 1 tsp
2 ml pepper 1/4 tsp
625 ml milk 2 1/2 cup
15 ml margarine or butter 1 tbsp

Heat oven to 350 F (180 C). Grease bottom and side of casserole dish with shortening. Melt margarine in saucepan over medium heat. Cook onion in margarine, about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute. Spread potatoes in casserole. Pour sauce over potatoes. Dot with margarine. Cover and bake 30 minutes. Uncover and bake 1 hour longer or until potatoes are tender. Let stand 5 to 10 minutes before serving.
