Makes 6 servings
1/2 cup flour
1/2 cup corn meal
1 teaspoon baking powder
Salt and pepper to taste
1 cup buttermilk
1/4 cup liquid egg substitute, or 1 egg lightly beaten
1 teaspoon olive oil
1/2 cup scallions including tops, chopped
1/4 pound smoked salmon, sliced and cut into 1 inch pieces
1/3 cup fat-free sour cream
Whisk together flour, cornmeal, sugar substitute, baking powder, salt and pepper. Add buttermilk, egg substitute, and 1 teaspoon oil; stir until combined. Add half the scallions; stir to mix. heat griddle or large sauté pan sprayed with cooking spray. Using 1/2 tablespoon per pancake, spoon onto pan and cook until lightly browned on both sides. Transfer to large platter. Top each with piece of smoked salmon. Put about 1/2 teaspoon of sour cream on the salmon. Garnish with remaining scallions.
