Sautéed Green Beans and Minced Shallots

1 tablespoon extra virgin olive oil
1/2 pound fresh green beans
1 tablespoon shallots, minced
Salt and freshly ground black pepper to taste

Heat olive oil over medium heat in a large skillet.

Add beans and shallots.

Cook approximately 5 minutes until beans are crisp and tender, stirring often.

Season with salt and pepper.

Makes 3 servings.
