Salmon and Pesto Spread

1 can red salmon, drained & flaked (6 oz / 170 g)
115 g cream cheese, softened 4 oz
10 ml fresh dill, snipped 2 tsp
2 green onions, finely chopped
50 m basil pesto 1/4 cup
225 g cream chese, softened 8 oz
50 ml butter, softened 1/4 cup
30 ml fresh chives, snipped 2 tbsp
black pepper
assorted crackers

In a medium bowl, stir together salmon, 4 oz (115 g) cream cheese and snipped dill. Spread salmon mixture evenly in bottom of loaf pan lined with plastic wrap. Chill for 10 minutes. Spread pesto over salmon mixture.

In a bowl, combine 8 oz (225 g) cream cheese, butter, chives and pepper. Drop by spoonfuls over pesto, spread over pesto. Cover and chill at least 6 hours.

To serve, invert loaf pan onto serving plater, remove plastic wrap. Let stand at room tempertaure for 15 minutes. Serve with assorted crackers.
