Root Vegetable Napolean with Beets

1 potato
1 sweet potato
1 parsnip
1 carrot
any root vegetables can be substituted
50 ml fine bread crumbs 1/4 cup
1 ml dry mustard 1/4 tsp
1 ml each salt & pepper 1/4 tsp
pinch cayenne
15 ml vegetable oil 1 Tbsp
1 egg
2 medium beets
15 ml balsamic vinegar 1 tbsp
15 ml vegetable oil 1 tbsp
15 ml honey 1 tbsp
112 g goat cheese 4 oz
sour cream to garnish

Grate vegetables and mix. Add breadcrumbs, seasonings and egg. Form pancakes, fry in hot oil on both sides until golden brown.

Boil and peel beets; slice. Combine vinegar, oil and honey. Toss beets to coat.

Form goat cheese into 8 small disks.

Layer pancake, beet, goat cheese; repeat to make 4 napoleons.
