1 (18.25-ounce) package yellow cake mix.
2 (16-ounce) containers ricotta cheese
4 eggs
1 cup sugar
1 teaspoon vanilla extract
Preheat oven to 325*F (160*C). Grease and flour a 13 x 9 x 2-inch baking pan.
Prepare cake mix according to package directions. Pour into prepared baking pan. Set aside.
Combine ricotta cheese, eggs, sugar and vanilla until well blended. Spoon evenly over the cake batter.
Bake for about 1 hour 15 minutes or until wooden pick inserted in center comes out clean. Cool thoroughly on wire rack. Sprinkle with powdered sugar. Store in refrigerator.
Makes 12 to 16 servings.
