3 cups cooked rice
3 cups 2% milk
1/2 cup granulated sugar
1/4 teaspoon salt (optional)
2 tablespoons butter or margarine
1 teaspoon vanilla extract
Combine rice, milk, sugar, salt and butter 3-quart saucepan. Cook over medium heat until thickened, 25 to 30 minutes, stirring often. Add vanilla.
To make sundaes, use an ice cream scoop to make 3 small scoops of rice pudding. Place into sundae dish. Try one of the following topping combinations or create your own: Fresh fruit (bananas, strawberries, peaches, blueberries, etc.) hot fudge, chocolate chips, colored sprinkles, crushed oreo cookies, chopped nuts, whipped cream and cherries.
