Rhubarb Iced Tea

Serving Size : 6

8 stalks rhubarb, cut into 3″ lengths
8 cups water
1/3 cup sugar

Place the rhubarb and water into large pot, bring to a boil, and simmer for 1 hour. Strain the liquid, add the sugar (more or less to taste), and serve iced with a mint sprig.
