Red Cabbage Side Dish

40 ml cooking oil 3 tbsp
1 onion, chopped
1/2 head red cabbage, shredded
2 tart apples, peeled, cored & cut into thin slices
75 ml raisins 1/3 cup
75 ml red wine 1/3 cup
22 ml red wine vinegar 1 1/2 tbsp
12 ml dried thyme 2 1/2 tsp
10 ml sugar 2 tsp
pinch grated nutmeg
salt
75 ml water 1/3 cup

In a large pot; heat oil over moderately low heat. Add onion and cook, stirring occasionally, until translucent, about 5 minutes. Add cabbage, apples, raisins, wine, vinegar, thyme, sugar, nutmeg and salt. Bring to a simmer. Cook, covered, for 10 minutes. Add water. Cook, partially covered, until cabbage is tender, about 30 minutes longer. Add pepper.

This dish is the perfect accompaniment to pork chops.
