10 ml olive oil 2 tsp
2 onions, thinly sliced
2 apples, peeled & thinly sliced
1 red cabbage, shredded
30 ml cider vinegar 2 tbsp
30 ml maple syrup 2 tbsp
250 ml apple juice 1 cup
salt & pepper to taste
In a large skillet; heat oil on medium-high heat. Add onions and apples. Cook for 5 minutes or until tender.
Add cabbage, vinegar, syrup and apple juice. Bring to a boil. Cook, covered, over medium heat until tender, about 25 minutes. Season with salt and pepper.
