1 large head romaine lettuce, washed & torn into pieces
50 ml red wine vinegar 1/4 cup
175 ml extra virgin olive oil 3/4 cup
30 ml raspberry jam 2 tbsp
salt & pepper to taste
1 small red onion, peeled & thinly sliced
625 ml fresh raspberries, rinsed & patted dry 2 1/2 cup
750 ml seedless watermelon, cubed 3 cup
125 ml feta cheese, crumbled 1/2 cup
In a blender; combine vinegar, oil and raspberry jam. Process on low until smooth. Add salt and pepper to taste; set aside.
In a large salad bowl; gently combine lettuce, onion, raspberries and watermelon. Drizzle dressing on top and garnish with cheese.
