Radish & Beef Stir Fry

250 g sirloin steak, cut in strips 1/2 lb
8 radishes, sliced
2 celery stalks, sliced
2 green onions, sliced
250 ml mushrooms, sliced 1 cup
25 ml vegetable oil 2 tbsp
1 garlic clove, minced
25 ml red wine vinegar 2 tbsp
45 ml orange juice concentrate 3 tbsp
salt & pepper to taste

Heat oil in a large wide frying pan or wok. When oil is hot; add meat and garlic. Stir-fry over high heat just until meat loses the red colour, about 2 minutes. Add vegetables continuing to stir-fry until tender-crisp and vibrant in color, no more than 2 minutes. Stir in vinegar and orange juice concentrate. Continue stir-frying over high heat until mixture is hot, about 1 minute. Sprinkle with generous pinches of salt and pepper. Serve immediately with rice.
