Quick Curried Pork

500 g ground pork
250 ml onion, sliced
500 ml mushrooms, sliced
250 ml red pepper, chopped
30 ml garlic, minced
30 ml fresh ginger, minced
15 ml curry powder
10 ml ground cumin
250 ml water

In a large skillet; saute pork over high heat for 3 minutes. Reduce heat to medium; add onions, mushrooms and peppers. Saute for 5 minutes.

Add garlic, ginger, curry powder, cumin and water. Cover and simmer on low for 30 minutes.

Serve over rice, couscous or pasta.
