2 breakfast sausage patties
3 eggs
1 green onion, chopped
2 whole wheat english muffins, split & toasted
2 slices cheddar cheese
Cook sausages according to package directions, set aside and keep warm.
In a small bowl; beat eggs. Pour eggs in small lightly greased skillet. Sprinkle onion on top. Cook and stir gently over low heat until just set. Season with salt and pepper to taste.
Place cheese on bottom halves of muffins. Top with sausage and eggs.
