2 cups brown sugar
1 cup oil
1-1/2 cooked, mashed or canned pumpkin
2 eggs
3 cups flour
1 teas salt
1 teas baking powder
1 teas vanilla
1-1/2 tablespoon cinnamon
1/2 tablespoon ginger
1/2 tablespoon ground cloves
Filling
1 beaten egg white
2 tablespoon milk
1 teas vanilla
1 cup confectioners sugar
plus
1 more cup of confectioners sugar
3/4 cup of shortening
Cream sugar and oil. Add pumpkin and eggs. Add dry ingredients and vanilla. Mix well. Drop by heaping teaspoons onto a greased cookie sheet. Bake at 350 F for 10-12 minutes.
Filling
Mix first 4 ingredients well then add rest of sugar and shortening.
Make sandwiches out of two cookies with filling.
