250 ml sugar 1 cup
250 ml cooked or canned pumpkin 1 cup
125 ml shortening 1/2 cup
15 ml orange rind, grated 1 tbsp
2 eggs
500 ml all purpose flour 2 cup
5 ml baking powder 1 tsp
5 ml baking soda 1 tsp
5 ml cinnamon 1 tsp
2 ml ground cloves 1/2 tsp
2 ml nutmeg 1/2 tsp
2 ml ginger 1/2 tsp
1 ml salt 1/4 tsp
250 ml semi sweet chocolate chips 1 cup
With electric mixer; mix sugar, pumpkin, shortening, orange rind and eggs until well blended. Stir in in all dry ingredients. Add chocolate chips. Drop by teaspoonful onto an ungreased cookie sheet. Bake at 375 F (190 C) until light brown about 8 to 10 minutes. Cool on rack.
