Potatoes and Cabbage

4 large red or white potatoes
250 ml milk 1/2 cup
45 ml butter 3 tbsp
750 ml green cabbage, finely shredded 3 cup
1 medium onion, chopped
15 ml fresh or dried parsley 1 tbsp
30 ml parmesan cheese 1/4 cup
salt & pepper to taste

Peel and boil potatoes. Mash with milk, salt and pepper. In the meantime, melt butter in large saucepan. Add cabbage and onion. Cover and cook over low heat about 5 minutes or until tender. Fold cabbage mixture, parsley and cheese into mashed potatoes. Serve hot.
