15 ml olive oil 1 tbsp
1 onion, sliced
1 garlic clove, minced
5 ml cumin 1 tsp
5 ml coriander 1 tsp
1 mango, peeled & diced
25 ml sugar 2 tbsp
25 ml lime juice 2 tbsp
1 kg red potatoes, diced & boiled until tender 2 lb
mint leaves
Heat oil in large frying pan; cook onion and garlic until soft and brown, about 10 minutes. Stir in cumin and coriander; toss with onions. Add mango, sugar and lime juice. Continue to cook on low heat, about 5 minutes. Place potatoes in serving bowl. Spoon onion mixture over top. Garnish with mint.
