2 or 3 lbs salmon fillets
6 cups chicken stock
1 dried dill blossom or 1/4 teaspoon dill weed
1 shallot, minced(optional)
1 recipe cuisinart hollandaise sauce
Place the salmon in a fish poacher or enamel roasting pan and add the chicken stock and dill and shallot if desired. Poach in the oven at 350 degrees until done. (About 1/2 hour)
Remove fish to a serving platter, garnish with parsley and serve with a boat of hollandaise sauce.
