Peanut and Raisin Coleslaw

1/2 of a large white cabbage OR use 1/4 red cabbage and 1/4 white.
2 large carrots, grated.
4 tablespoons salted or unsalted peanuts, according to your taste.
3 tablespoons seedless, unsulfured raisins.
6 tablespoons shop bought salad mayonnaise (or make your own.)
2 tablespoons tahini (sesame seed paste).

Quantity serves 6 as an accompaniment

Slice the cabbage into very fine strips about 3 inches (5 cm) long, and mix with the grated carrot, peanuts and raisins. Stir the tahini into the mayonnaise and mix well with the other ingredients so they are covered. This is best served fresh, but will keep, covered, in the ‘fridge for a couple of days. The quantities above are very general; if you like lots of mayonnaise then add more, if you hate tahini, leave it out.
