Pancakes (egg substitute) for 100

 

Ingredients Weights Measure
FLOUR, WHEAT, GENERAL PURPOSE 9-7/8 lbs 2 gallons
BAKING POWDER 8-3/4 ounces 1-1/8 cups
MILK, NONFAT, DRY 13-1/4 ounces 1 quart
SALT 1-7/8 ounces 3 tablespoons
SUGAR, GRANULATED 12-1/3 ounces 1-3/4 cups
EGG SUBSTITUTE, PASTEURIZED 2-3/4 lbs 1 quart
WATER 13 lbs 1 gallon
OIL, SALAD 1 lbs 2 cups

Sift together flour, baking powder, milk, salt, and sugar into mixer bowl.

Add egg substitute and water. Mix at low speed about 1 minute or until blended.

Blend in salad oil or melted shortening about 1 minute.

Pour 1/4 cup batter onto lightly greased hot griddle. Cook on one side 1-1/2 to 2 minutes or until top is covered with bubbles and underside is browned. Turn over and cook on other side 1-1/2 to 2 minutes.
