2 lb. catfish fillets
3/4 cup water
juice of 1 lemon
1 tablespoon hot pepper sauce (Tabasco)
1 cup cornmeal
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons peanut oil
Marinate catfish in water with Tabasco and lemon juice at least 1 hour (or overnight).
Combine cornmeal, flour, salt and pepper in a pie pan and dredge the fish to coat. Let stand on waxed paper to set the coating.
Heat oil in 13X9 inch baking dish in a 400 F oven about 10 minutes. Add fish fillets and bake about 15-20 minutes, until golden brown and fish flakes easily with a fork.
