500 g fresh halibut steaks 1 lb
75 ml onion, finely chopped 1/3 cup
1 garlic clove, minced
15 ml butter 1 tbsp
2 ml orange peel, finely shredded 1/2 tsp
50 ml orange juice 1/4 cup
salt & pepper to taste
30 ml fresh parsley, snipped 2 tbsp
thinly sliced orange slices
In a large skillet, cook onion and garlic in butter until tender. Add orange peel, orange juice, salt and pepper. Add fish. Bring just to boiling, reduce heat. Simmer, uncovered, for 4 to 6 minutes until fish flakes easily.
Transfer fish to serving platter. Spoon pan juices over fish. Sprinkle with parsley and garnish with orange slices.
