1 (8-ounce) package cream cheese
2 cups sharp cheddar cheese, shredded
1 (1-ounce) package ranch dressing mix
6 large hard-cooked eggs, diced
1 cup pecan pieces
1/2 cup fresh parsley, chopped
1/2 cup red pepper, diced
In a large bowl, mix together cream cheese, cheddar cheese, ranch dressing mix and hard-cooked eggs. Use your hands to form into two balls and set aside.
Mix pecans, parsley, and red pepper together in separate bowl. Roll each ball in the mixture until covered.
Refrigerate for at least 2 hours. Serve with crackers.
Makes 2 party balls.
