2 tablespoons skim milk
1 tablespoon lemon juice
1 cup lowfat cottage cheese
1/4 teaspoon salt
Place all ingredients in a blender and mix on medium-high speed until smooth and creamy. Use as a sour cream substitute.
This sauce may be added to hot dishes at the last moment. Or serve it cold, with the addition of flavoring or herbs, as a dressing for salad or a sauce for a mousse.
