3kg ripe tomatoes
juice of 1 lemon
1 bottle essence of raspberry
2-1/4 kg sugar
15g powdered orris root (which you should be able to get from a chemist)
cochineal
Pour boiling water over tomatoes and peel them. Put them in a preserving pan with sugar, orris root and lemon juice. Boil until thick, then add raspberry essence. Remove from the fire and color to desired color with cochineal.
You could also make plain tomato jam, which is very nice.
